We begin on the farm, in the nursery, choosing seeds and cultivars. Coffee attributes are predicated on the terroir, including altitude, makeup of the soil, amount of sun and rain, every element of the microclimate.
Next stop on our journey is knowing the optimal time to pick the berries by hand, then understanding the finer points of drying and milling.
When we arrive at the roasting station there are decisions: at what temperature should we roast, for how long, and on which roaster? The answers to each may send us in a new direction.
The finished roast brings us to the grinder and choice of brewing method (finer or coarse, more or less water, and finally water temperature)? The decisions can change the result in significant ways.
For us, we have been award accolades year after year for our roast. In 2020, we were ranked #17 in the BSCA International Cup of Excellence, and also won 1st place for aroma.
